Hello, my cooking family!
I hope you are not only looking at the beautiful meals and learning the easy recipes. I want you all to also try them out. That’s the goal of this family we are building. I want you to try cooking for yourselves. Like I always say, Cooking is all about practice!
Today, I will be walking you through some easy steps to prepare “Fried EggPlant”. This is one of my favorite dishes and also very nutritional.
Did you know Eggplant has antioxidants like vitamins A and C, which help protect your cells against damage? So not only is it delicious, it helps your body! That’s a big win for you.
So, let’s get into cooking.
Total Prep Time: 40mins.
Serving: 5-10 serving.
Cook Time: 60-90 minutes.
• Variety of fish or beef of your choice.
• 4-6 hot pepper (spicy) or you can reduce it according to your spice tolerance. I like my food spicy and especially for my eggplant.
•Olive/ vegetables oil
• Bell pepper
• 1 Tbsp of salt
• 1 Tbsp black pepper.
• 1 Maggi crevette shrimp/ chicken buillon or Maggi star crayfish/ Nigerian Maggi.
• 2 Knorr cubes.
• 1 Tbsp of badia complete seasoning.
• 1 Tbsp of lawry’s all purpose chicken seasoning.
• 2 pack of sazon goya
Peel: Eggplant and cut into cubes, and fry for 20-30 minutes.
Next, add in Sazon Goya to change the color of the sauce/ stew and to add flavor. Then, mix well.
Add in your already cooked mix meat/ fish to sauce/ stew and let it cook for 10-15 minutes.
Lastly, get ready to serve.
Tip: Divide your seasoning in half; half for prepping and the other half for making the soup/sauce/stews. This way you can keep track of the seasoning and avoid over seasoning.
